SHRIMP AND SCALLOPS WITH LINGUINE
DINNER AT HOME

Scoured through the freezer in an attempt to use some of the older items that have been hanging around too long.  Found six large scallops and a bag of frozen shrimp.  Checked the pantry and located some garlic, shallots and a 16 oz can of Italian Style Tomatoes with Basil and Oregano.  The light bulb came on in my mind and I got to work making a tasty sauce.  Started by chopping up a lot of garlic and shallots.  Sauteed them in a tablespoon of butter and vegetable oil.  Threw is some Crushed Red Pepper Flakes along with some salt and pepper. When the garlic began to brown, I added about a half cup of white wine and let it reduce.  Added a cup of Chicken Stock plus the can of Tomatoes and let that cook down for awhile.  Finished with a few tablespoons of butter and oregano.  While the sauce thickened I put around a dozen of shrimp into it and let them cook through.  At the same time I heated a bit of butter and vegetable oil in a frying pan.  Added the scallops that had been salt and peppered and cooked around two minutes on both sides.  The scallops were cooked perfectly and sweet.
