TURKEY BOLOGNESE WITH PENNE PASTA
DINNER AT HOME

Costco had four packets of Fresh Ground Turkey at a great price.  I was thinking of trying to reduce the amount of fat in our diet so I bought the packages and substituted Ground Turkey for a Bolognese Sauce where I usually use Ground Beef, Pork and Sausage.  Once again I went for the Bertolli Tomato and Basil Sauce because it delivers great flavor and a great price.  We always keep several bottles of Bertolli in the pantry.  It is one of my favorite sauces for pasta.  I just used what we had in the refrigerator and pantry for this recipe.  One onion, several cloves of garlic, diced carrots, bell pepper and some oregano leaves.  I cooked the vegetables in about a tablespoon of olive oil and then deglazed with white wine.  Added a pinch of crushed red pepper for a bit of heat too.  After cooking and seasoning the Ground Turkey I mixed the vegetables and the meat and then added two jars of Bertolli sauce.  Simmered and then added some steamed broccoli because we had a large bag of it in the fridge.  This recipe was quick, easy and very delicious.  Low fat too!

GROUND TURKEY, ONION, GARLIC, CARROTS, BELL PEPPER, OREGANO LEAVES AND
BERTOLLI TOMATO AND BASIL SAUCE (Not Shown is White Wine and Parmesan Cheese)
PENNE PASTA, DEFROSTED GROUND TURKEY AND BROCCOLI FLORETS
(HAD THE BIG BAG OF BROCCOLI SO I DECIDED TO USE SOME IN THIS RECIPE)
SAUTE ONIONS AND GARLIC IN OLIVE OIL
ADD THE CARROTS AND COOK.  I ADDED CRUSHED RED PEPPER AND OREGANO LEAVES HERE
ADD THE BELL PEPPER OR ANY OTHER VEGETABLES YOU LIKE AND COOK UNTIL DONE
I PUT IN ABOUT 1/2 CUP OF WHITE WINE AND REDUCED
WHEN WINE IS REDUCED REMOVE VEGETABLES AND SET ASIDE
COOK GROUND TURKEY
SALT AND PEPPER THE TURKEY TO TASTE.  ADD MORE OREGANO IF YOU LIKE
PLACE VEGETABLES BACK IN PAN WITH THE GROUND TURKEY
ADDED TWO BOTTLES OF BERTOLLI SAUCE AND SIMMERED.  I STEAMED THE
BROCCOLI FLORETS WHILE THIS COOKED
