Enjoyed a delicious meal at the Watertable located inside the Hyatt Regency Resort in Huntington Beach, California.  I arrived before 6:00 PM and found the restaurant and bar to be pretty empty on a weeknight.  The hostess gave me free reign to chose any table so I took a booth near the bar where I had a view of the televisions playing a basketball game.  Water was quickly served from a carafe that was filled from the Watertable that sits next to the bar.  The water is fed into the top, filtered and then dispensed through spickets into the carafe's.  Tasted great.  I started my meal with the fresh baked bread that is served to you in a bag.  The bag helped keep the bread warm.  Not bad.  The Hamachi Crudo ($12) was pretty small and simple.  The fish was fresh and melted in your mouth.  Only problem was that the sauces on the plate did not have much flavor.  I was craving a little Ponzu Sauce and JalapeƱo with my Hamachi.  The Whole Leaf Caesar Salad ($8) was fantastic.  Probably one of the best Caesar Salads I have had in a while.  The Whole Leaf Romaine Lettuce was chilled and crisp.  The dressing was perfect and they did not soak the lettuce like many restaurants do.  The Anchovies added a lot of flavor and made this a Caesar to remember.  Only miss on the plate was the bread.  Hard as a rock and flavorless.  I ordered the House Butchered Filet ($38) with Olive Oil and Salt.  Went with the six ounce cut and it turned out to be perfect amount of meat for me.  The steak was cooked to a perfect medium rare.  I savored each bite because it was good.  Really good.  Liked the grill marks on the top that seared in the juices and flavor.  Finished my meal with the Six Degrees of Chocolate ($9).  The waitress said it was decadent.  I found it to be good but not great.  Kind of like a brownie, chocolate mouse and cake all in one.  Enjoyed the people, service and food at Watertable.
