ROTISSERIE CHICKEN SALAD
DINNER AT HOME

There is no better deal in town than the $4.99 Rotisserie Chicken sold at Costco and Sam's Club.  We picked up a Rotisserie Chicken at Sam's and it yielded two meals for our family of three.  We find the Sam's Club chickens to be less fatty and more seasoned than the Costco version.  We love the Costco chickens too, but on this occasion we were shopping at Sam's.  I had half of a chicken left and wanted to prepare a dinner that was somewhat healthy as I am on a mission to lose some weight once again.  I literally took every vegetable that we had in our refrigerator and sliced and diced until I filled a large bowl.  Lettuce, Spinach, Carrots, Celery, Red Onion and Cabbage were included.  Finished the salad by cutting up the chicken and adding some Bacon, Cheddar, Provolone and Fontina Cheeses, Salami and a Boiled Egg.  We used Panera Balsamic Dressing and it was delicious.  This was a filling salad with lots of different flavors and textures.  Really good meal at a bargain price.  Wish they would have had these $5 chickens back in the day when  I was broke and could only afford Cup of Noodles.  I could have made one of these birds last a week and would have been quite happy.
