SHUTOME WITH MUSHROOM CREAM SAUCE
DINNER AT HOME

Shutome as it is called in Hawaii is actually Broadbill Swordfish.  The fish is very firm and has a mild flavor.  When I saw Shutome at the market for $3.49 per pound I had to buy some.  Sitting right next to the Shutome was Mahi Mahi but it was $14.99 per pound.  Fresh grilled Shutome with butter, salt and pepper is good but on this occasion I kicked up the flavor with a quick Mushroom Cream Sauce.  I am not a cook but just like to experiment with different flavors.  Normally don't measure anything and just pour and taste as I go.  I picked up some nice mushrooms on the Island of Kauai for $5 so this meal for three was around $15 total.  Served the fish with some leftover Linguine topped with the Mushroom Cream Sauce.  Fish turned out perfect and was delicious.

FRESH HAWAII GROWN MUSHROOMS
TWO NICE PIECES OF SHUTOME FOR UNDER $5
LOVE IT WHEN WE CAN BUY QUALITY FRESH FISH FOR CHEAP!
SHALLOTS AND GARLIC SAUTED IN OLIVE OIL AND BUTTER
DEGLAZED WITH WHITE WINE AND REDUCED
ADDED A BIT OF CHICKEN STOCK AND REDUCED
ADDED IN ALL THE FRESH MUSHROOMS
FINISHED WITH CREAM, BUTTER AND PARMESAN CHEESE
PLACED THE SHUTOME ON HOT GRILL PAN
COOKED BOTH SIDES UNTIL DONE
FRESH GRILLED SHUTOME WITH LINGUINE AND MUSHROOM CREAM SAUCE
