STUFFED BELL PEPPERS

 STUFFED BELL PEPPERS
DINNER AT HOME

When I was very young, I can remember visiting my Grandma in her trailer.  One of her favorite dishes was Stuffed Bell Peppers.  How she cooked such good food in the tiny galley kitchen and on a very strict budget I took for granted as a child.  Had no idea what she did not have.  Just thought the small trailer was normal.  I loved my Grandma more than anything in the World. She was strong, firm  yet so loving.  She did her best to instill in me family and christian values.  A happy day for us was enjoying Stuffed Bell Peppers, Stuffed Cabbage or enjoying a Mustard Dog at Der Wienerschitzel.  We would sit in her trailer for hours talking, reading bible stories and watching tv.  She sat in her rocking chair with her calm smile and always did whatever she could to make us happy.  She had nothing but love to give us and it was the best gift ever.  She died in that rocking chair and I miss her dearly as I write this.  Wow..can't believe I just wrote that.  Just came out.  Back to the Bell Peppers.  Grabbed a great recipe from the internet and made these delicious Bell Peppers stuffed with Ground Beef, Sausage, Basmati Rice and a vegetable mixture consisting of Onions, Shallots, Garlic, Bell Pepper, Mushrooms, Pepper Jack Cheese and Diced Tomatoes.  Placed the Stuffed Peppers in a pan that was filled with about 1/4" of water.  Cover with foil and baked at 350 for 30 minutes.  Removed the foil and cooked an additional 15 minutes.  Results were fantastic.  I served the Peppers with some Tomato and Basil Sauce.

MOST OF THE INGREDIENTS READY TO GO.  NOT SHOWN IS THE ITALIAN SAUSAGE
AFTER COOKING THE BEEF AND SAUSAGE I SET THEM ASIDE IN A BOWL AND THEN CLEANED THE PAN.  ADDED OLIVE OIL TO THE SAME PAN AND THEN COOKED ALL MY VEGETABLES.  ADDED ONE CUP OF BASMATI RICE PLUS A CUP OF PEPPER JACK CHEESE AND MIXED.
STUFFED THE PEPPERS WITH THE BEEF AND VEGETABLE MIXTURE.  COAT WITH OLIVE OIL.
TOPPED WITH MORE PEPPER JACK CHEESE
COOKED PEPPERS IN PAN WITH A LITTLE WATER ON BOTTOM.  COVER WITH FOIL AND COOK FOR 30 MINUTES AT 350 DEGREES.  REMOVE FOIL AND COOK ADDITIONAL 15 MINUTES
SERVED ON BED OF TOMATO AND BASIL SAUCE
