TURKEY SOUP

 TURKEY SOUP
DINNER AT HOME

Had to make use of a lot of Thanksgiving leftovers so I decided to make Turkey Soup.  Started by using the carcass from our Turkey and then added lots of fresh vegetables and herbs.  This is a delicious and hearty Turkey Soup.

 TURKEY SOUP

PLACED THE CARCASS, BONES AND NECK IN ABOUT 2 QUARTS OF CHICKEN STOCK AND WATER.
SIMMERED FOR SEVERAL HOURS UNTIL THE MEAT WAS FALLING OFF THE BONE
SAUTEED GARLIC, ONIONS, SHALLOTS, CELERY AND CARROTS AND THEN ADDED
FRESH SAGE, THYME, PARSLEY, SALT AND PEPPER.  SET ASIDE.
PULLED ALL THE MEAT OFF THE BONES
REMOVE SKIN AND GET ALL THAT DELICIOUS TURKEY MEAT
ADDED TURKEY MEAT AND A CUP OF RICE TO THE LIQUID.  SIMMERED UNTIL THE RICE WAS
COOKED.  ADDED GARLIC POWDER AND ONION POWDER AND A LITTLE CHICKEN BOUILLON.
ONCE THE RICE WAS COOKED I ADDED ALL THE VEGETABLES
STIR AND SIMMER FOR AROUND 30 MINUTES
TURKEY SOUP IS READY TO SERVE
