PAPPARDELLE WITH MUSHROOMS, BROWN BUTTER, SAGE AND PARMESAN

DINNER AT HOME

Made one of the families favorite dinners at the request of my Daughter.  Being that it is her Happy Birthday Week I made sure this came out perfect.  Oh my it did.  So good I abandoned my low carb diet to enjoy some Pasta.  I did not eat much.  Just enough to fill me up and take in all the great flavors.

Vine Ripened Tomatoes, Basil and Burrata with Balsamic Glaze.  Oh..and a little Prosciutto too.  Appetizer for Keli's Happy Birthday Week.  Light, fresh and delicious!

CAULIFLOWER TORTILLA CHIPS WITH GUACAMOLE

SNACK AT HOME

Made some delicious Guacamole and served it with Cauliflower Tortilla Chips.
I love Tortilla Chips and while these don't have that Tortilla taste, they are darn good and do satisfy my craving for Chips and Dip.

Love Pieology Pizza with Cauliflower Crust.  Bummer that they charge an extra $3 for this but it is as good as the normal crust.  I asked for Oregano on this one and the worker making my pizza unloaded teaspoon after teaspoon of ground Oregano.  Kind of ruined half the pizza.

Crazy that we have not dined in at Maile's Thai Bistro in Hawaii Kai for over a year.  Covid forced us to order takeout from our favorite Thai restaurant.  Returning to the restaurant was nice but seeing the plexiglass, masks, distanced tables, takeout table and other safety measures took away from the neighborhood feel of this place.  Could not stop thinking of what our friend Maile has gone through to stay open and get through these messed up times.  Whats not messed up is the food at Maile's.  Always a hit with me and my gals.  The girls love the Cold Tofu and French Fries here.  Yes French Fries and a Thai restaurant.  Thin, crispy, salty and delicious.  I only ate one to stay low carb and avoided the Pad Thai and limited myself to one Spring Roll when I usually eat as many as possible.  Loved the crispy fresh vegetables in the Ong Choi Beef and Sweet and Sour Fish.  Everyone loved the food and the service was fast and great too!

Enjoyed a World Class Sushi dinner at Maru Sushi Hawaii.  Michelin Star Chef Takeshi Kawasaki really knows how to prepare Sushi and engage guests in what could be one of the most expensive restaurants in Hawaii.  At $250 per person minimum plus the cost of drinks, this place is not somewhere we would go often.  Celebrating my Daughters birthday so decided to go for it.  The small 9 seat counter has two seatings nightly.  One at 5PM and one at 7:30PM.  What sets this place apart for me is the service and engaging attitude of the staff.  They take time to explain each dish and Chef Kawasaki loves to talk about golf.  Refreshing to have such a relaxed and casual atmosphere with a Chef that does not have an attitude.  Most of the fish here is flown in from Japan and it is delicious.  Every dish was so good and they space out the meal with different textures, soup and seafood so you don't get too Sushied out.  We all liked the fact that a lot of the dishes do not include rice and the ones that do have just enough for flavor and texture.  Perfect balance that does not fill you up so fast.  Also great to reduce the carbs for me.  This was an incredible dinner and experience and I would love to go back over and over again because Chef Takeshi is one cool cat.
