LOW CARB SHRIMP TEMPURA TACOS

DINNER AT HOME

Taco Tuesday at Casa de Santos and we once again went with Shrimp Tempura Tacos.  These are one of our all time favorite Tacos and every time I eat them, I say wow.  We use A La Madre low carb tortillas which taste like normal tortillas.  Love them.  Highly recommend you try making these at home.  My Daughter actually made these at her college apartment in California the very same night.  We buy the Shrimp Tempura from Costco and then assemble.
Only takes 14 minutes to heat up the Shrimp and while that is happening I do the prep work.
First make the White Sauce with half Mayonnaise and half Plain Yogurt.  Mix well with a nice squeeze of Lime Juice.  Shred some Cabbage and Cheddar Cheese.  Make Pico de Gallo (Onion, Tomato, JalapeƱo with a squeeze of Lime Juice).  To assemble heat your Corn Tortillas and then top with Cabbage, White Sauce and some Hot Sauce.  Place the Tempura on top of the Cabbage and coat with a little of the Tempura Sauce that comes with the Shrimp.  Add Shredded Cheese, Pico de Gallo and a little Cotija Cheese and Avocado slice if you have it.  Take a bite and fall in love with these Shrimp Tempura Tacos.

Went for a Taco Bell Steak Power Bowl for lunch.  I ordered it Protein style with no Rice or Beans.  This was actually very good, filling and satisfying.

I have been following the building of Bar Podmore on Instagram for what feels like two years.  The Owners, Anthony Rush and his Wife Katherine Nomura have put their heart, souls, creativity, passion and lots of money into this historic building and believe me they did not scrimp on anything.  To pull off all the design, permits, construction, procurement of materials and requirements for preserving a Hawaii historic building during COVID must have been an ordeal and I salute Anthony and Katherine for getting the job done.   From the floors to the walls, fixtures and furnishings this place is beautiful.  The purple and green seating surprisingly works well and transforms you to a bar reminiscent of London or New York.  There is nothing like this in Hawaii and I love it.  The service level here is above any bar in Hawaii and more like a Five Star restaurant.  This is not the type of place you pop into to slam a few draft beers and a shot.  It is rather, a place where you dress up a bit, relax and spend an hour or two enjoying the imaginative drinks, beautiful decor an elevated bar food.  My Wife does not drink but decided to try the Chung Chow because she liked the look of all of the flavored ice that fills the glass with color.  Surveying around the bar, it looked like most woman were enjoying this drink.  At $30 it is not cheap but this is not something you can get anywhere else.  I asked our waitress if they have wine and to my surprise she said no.  They did however serve champagne by the glass which I happily enjoyed.  I get that they want people to try and enjoy the specialty cocktails, but I don't drink hard alcohol and would be very happy to sit awhile and consume a nice bottle of wine.  My Wife liked the Chung Chow and especially the fruit flavored ice balls.  The Foie Gras Parfait was one of our favorite dishes here.  Served with mini Yorkshire Pudding which we loved.  The Devils on Horseback is a huge blast of Blue Cheese.  Chef told us to eat in one bite so we did.  If you love Blue Cheese you will love this little appetizer.  My favorite dish was the Hamachi Roll.  The Hamachi Spread and Smoked Trout Roe comes through lightly plus the buttered bread is heaven.  The Scotch Quail Eggs also hit the spot but I thought there was just a little too much breading covering the delicate eggs and sausage.  I am not a big fan of Pork Belly so the Roasted Pork Buns were not my favorite.  If you do like Fried Pork Belly than you will love these little pillows.  The Apple Sauce was a good accompaniment to the Pork.  I was full when the Steamed Ricotta Dumplings arrived at the table.  It is a play on a Dumpling with no pasta.  We actually were craving a pasta Dumpling.  Tried one and thought it was just ok.  Probably would not order again.  Both me and my Wife thought it would be nice if there were more food options and hope they rotate the menu often or seasonally.  We are really looking forward to enjoying Brunch here and will return again for another cocktail.  Owner/Chef Anthony Rush was very gracious and took the time to walk us out and talk a bit about the restaurant and building process.  Truly a gentleman and great Chef.

This Wedge Salad was amazing and a full meal.  I made homemade Pickled Beets which added great flavor.  Topped the Wedge with Blue Cheese Dressing, Crumbled Blue Cheese, Egg, Red Onion, Green Onion and Tomato.  This is now one of our favorite salads ever!

ZUCCHINI PASTA WITH MEAT SAUCE

DINNER AT HOME

    We have been experimenting with a lot of low carb substitutes for Pasta.  This version using fresh Zucchini and the Spiral Cutter attachment on our mixer has been by far the best.  I made my normal Pasta Sauce with Ground Beef, Italian Sausage, Onions, Garlic, Onion, Carrots, Celery and a Tomato Basil Sauce.  Super delicious and low carb too

CORNISH GAME HEN WITH SUCCOTASH

DINNER AT HOME

My Wife loves making Cornish Game Hens.  She prefers them over Chicken.  She normally marinates them overnight and then grilles them on the BBQ.  The BBQ method works well but to get the Hens cooked through they normally end up a little burnt on the outside.  She now uses the Air Fryer which produces the perfect crispy skin with a moist and tender inside.  These came out perfectly and were delicious.  She loves making Succotash too and this batch really came out good too.

Woke up craving a Mendocino Farms Heirloom Tomato BLT.  Since we do not have Mendocino Farms in Hawaii, I made my own low carb BLT with a little Avocado.
This was delicious and very satisfying!

Enjoyed another delicious dinner at Oahu Country Club.  On this visit everything was delicious and service was great.  Started with the super fresh Sashimi which was perfect.  Melted in your mouth.  The Buffalo Cualiflower also delicious and a nice low carb appetizer for the table.  I had the Wafu Steak and it was cooked to a perfect medium rare, seasoned well and delicious.  My Wife had the Shio Koji Salmon and loved it.  Everything was spot on!

REALGOOD GRANDE RICOTTA CHEESE CANNELLONI WITH MARINARA SAUCE

DINNER AT HOME

These low carb Ricotta Cheese Cannelloni's were pretty good.  Would definitely buy them again.  Cooked for around 35 minutes at 375 degrees.  After 15 minutes I removed them from the oven and cut a slit down the middle of each one.  Then back in the oven to finish baking.  I heated up some extra Marinara Sauce and lined the bottom of the plate.  Also topped with some Mozzarella Cheese and Parsley.
