Back at the Aria which means a visit to Carbone. While our waiter was a bit arrogant, his assistant was the bomb. Always smiling, cracking jokes and engaging us while the waiter acted like he was bigger than anyone in the room. Service starts with large pieces of Parmesan Cheese cut from a wheel at your table. Then comes the Pickled Veggies and Salami. Salami is always delicious and goes well with the Parmesan and a little Italian Chianti. The Foie Gras appetizer was delicious but the bed of vegetables it was served on was bitter. This dish needed a sweet sauce and maybe a Crostini. I used the Garlic Bread from the basket. The Beet Salad was super bland and really needed some sort of dressing or sauce. Beets were fresh and abundant though. The Rigatoni Vodka is my Wife's favorite and we loved the Pasta and Sauce. As our arrogant waiter said, "if you have been here before, you would know that the Veal Parmesan is our #1 dish" so we ordered it. The Veal Parm was delicious. Best I have ever tasted. It went well with the Rigatoni Vodka too. I always like a little Pasta with Veal or Chicken Parm. Just seems like they were made for each other.
