I asked my wife what she wanted for dinner and she said no meat or fish.  She wanted chicken and vegetables. O.K. I thought let me see what I can whip up.  I went to one of my favorite recipe web sites called Epicurious.com  and typed in chicken and vegetables.  To my surprise, Chicken Pot Pie Recipes came up with great reviews.  I took a quick look at several recipes and then watched a quick video from Tyler Florence where he cooks up a one pot Chicken Pot Pie dinner.  My version was a combination of several recipes and the video.  We used a $6 chicken that is sold at all the warehouse stores like Costco.  I am not a baker so I bought pie crusts that were on sale for like $5 for four.  Picked up some heavy creme and veggies and just started throwing everything into the pot.  First the veggies, then the chicken stock and creme.  Added the chicken, seasoned and then filled the pie crusts.  Cooked for around 40 minutes until golden brown.  This was easy to prepare and cook.  The flavor was excellent.  If I do this again, I will make in individual servings rather than big pies.

SAUTEED ALL THE VEGETABLES IN OLIVE OIL
ADDED WARM CHICKEN BROTH AND HEAVY CREME
STIR IN THE CHICKEN MEAT
ADDED ONE BAG OF FROZEN PEAS
THE BOSS ADDED FRESH THYME AND LOVE
PRE-MADE PIE CRUSTS WERE ON SALE AT FOODLAND
THAWED TWO PIE CRUSTS UPSIDE DOWN
THAWED TWO PIE CRUSTS TO HOLD THE FILLING
USED TWO PIE CRUSTS AS COVERS
FILLED THE PIE CRUSTS WITH CHICKEN AND VEGGIE FILLING
LOOKS DELICIOUS ALREADY!
COVERED WITH THE REMAINING CRUSTS
BAKED UNTIL GOLDEN BROWN AT 425 DEGREES
FINAL CHICKEN POT PIE WAS REALLY DELICIOUS
