CHICKEN WELLINGTON - DINNER AT HOME

CHICKEN WELLINGTON
DINNER AT HOME

While digging through the refrigerator for lunch and finding some great Yokisoba Noodles, I thought about dinner.  I found a bag of Costco Boneless, Skinless Chicken Breast and a box of Puff Pastry that has been taking up room in the freezer for months.  I Googled Puff Pastry and Chicken Breast and found a great and very easy recipe on puffpastry.com.  I needed to run to the store for a cheese and garlic spread but other than that, we had everything needed for this recipe at home.  While at Foodland Farms I thought about taking this recipe to the next level and bought some Liver Pate to add to the recipe.  Even with the Pate, this was a very affordable dinner.  I thawed the chicken breasts and puff pastry and then embarked on what was a pretty easy dish.  I rolled out the pastry dough until it was 14" x 14" and then cut it in 7" squares.  Then I spread down a few tablespoons of the Liver Pate and then topped it with the cheese and garlic spread.  One tablespoon of fresh parsley was added to the pate and cheese.  Placed the pre-cooked chicken breast on top and folded over the puff pastry.  Coated the entire packet with an egg and water wash and then baked for 25 minutes.  I made a quick sauce using butter, white wine, beef stock and some other stuff that added a deep flavor to the chicken.  This was a huge hit at home and a TASTE OF HAWAII FAVORITE.
