CHICKEN, BROCCOLI AND RICE
PRESSURE COOKER
DINNER AT HOME

Picked up a big package of boneless, skinless chicken thighs at Sam's Club.  These thighs were awesome.  Large pieces of chicken rolled up.  You could actually stuff them.  My wife wanted thighs over breasts because she likes the flavor.  I cut up the thighs and placed them in the pressure cooker along with rice and onions.  Cooked for only 10 minutes and then added some broccoli and parmesan cheese.  Wow...lots of flavor and hearty meal in only minutes.  Not the best looking dish but very tasty.

BONELESS, SKINLESS CHICKEN THIGHS ON SALE AT SAM'S CLUB.
TOSSED IN PRESSURE COOKER WITH ONIONS.  SAUTE UNTIL

CHICKEN IS LIGHTLY BROWNED AND ONION IS TRANSLUCENT.
ADD RICE, CHICKEN STOCK AND SEASONINGS.  COOKED FOR
10 MINUTES.  THEN ADDED BROCCOLI AND PARMESAN CHEESE
AND COOKED FOR TWO MINUTES.
