I have dined at Chibo in the Royal Hawaiian Center for years.  Always a good place to take out of town guests for a taste of Japan, Teppanyaki and Okonomiyaki.  Okonomiyaki is Chibo's signature dish.  The dish originated from a baked snack made from baked flour and soybean paste.  The roots go back to the Edo period.  Okonomiyaki became very popular after World War II to help alleviate the food shortage.  Over the years Okonomiyaki has evolved with many variations.  The most popular being the Osaka style Okonomiyaki.  It is basically a "pancake" consisting of flour, egg, cabbage and mountain yams, with ingredients which you can choose from the menu.  Once cooked the pancake is topped off with Okonomiyaki sauce, a Japanese version of plum sauce, a mayonnaise sauce, seaweed powder and dried bonito flakes.  We ordered our pancake with steak, scallops and shrimp.  They fold the meat and seafood into the pancake and cook it until crispy and cooked through.  You can choose a variety of vegetables, seafood and even Kim Che to put inside your Okonomiyaki.  After all that, I can tell you that I really don't like these things.  The yams add a gummy taste similar to mochie that I do not like.  They run around $20 each.  For lunch I enjoyed a combination of Steak and Shrimp served with Fried Rice, Miso Soup, Pickled Vegetables, Salad and sauteed Bean Sprouts, Mushrooms and Onions.  This combination was around $20 too.  I loved everything delivered to my seat overlooking the cooktop.  The Fried Rice and Miso Soup are really good here.  My steak was cooked perfectly and served with nice serving of fried garlic.  My Nephew and Daughter enjoyed Teriyaki Steak.

PANCAKE IS COOKED ON BOTH SIDES SLOWLY UNTIL COOKED THROUGH AND BROWN
THE FINISHED OKONOMIYAKI IS THEN TOPPED WITH PLUM SAUCE, MAYONNAISE AND BONITA FLAKES
YOU GOTTA LIKE MAYO AND PLUM SAUCE TO ENJOY THIS
HOUSE SALAD WITH SOY/GINGER DRESSING
