GIOVANNI RANA MAIN LOBSTER RAVIOLI

GIOVANNI RANA MAINE LOBSTER RAVIOLI
DINNER AT HOME

Wow....one of the tastiest dinners at home ever.    We picked up some Giovanni Rana Maine Lobster Ravioli at Costco because we absolutely loved the Giovanni Rana Butternut Squash Ravioli.  I wanted to kick the dish up a notch for my Wife's birthday weekend so I decided to buy some lobsters to add to the dish.  Have to say this was a brilliant idea.  The large lobster chunks added great texture, huge lobster taste and put this dish over the top.  I picked up the lobsters for $6 each so dinner for three was under $25 for what I think was a restaurant quality meal.  In fact if a restaurant served something this good at an affordable price I would go back over and over again.  The sauce is simple.  Melt one stick of butter and heat until almost brown.  Add lots of fresh Sage and let it infuse the butter with flavor.  Be careful not to burn the butter.  You need to watch the heat and make sure the Sage crisps up without burning.  Once the Sage is crispy remove it with tongs and add about a half cup of cream. Heat throughly and then add 3/4 cup of grated Parmesan Cheese and a squeeze of lemon juice.  I steamed the lobster tails and then cut them up into small pieces and added them to the sauce.  The Ravioli was added to boiling water and cooked for three minutes.  Once cooked I added the Ravioli to the sauce and lobster.  Mixed it all up and plated.  Oh my goodness this was good. Incredible fast and easy dish that I would highly recommend you try at home.  The Giovanni Rana Main Lobster Ravioli are good on their own too.  The pasta is fresh and has a great texture.  There is a good amount of lobster in each ravioli and the flavor is good even without adding lobster or a sauce.
