BEEF AND VEGETABLE STUFFED ZUCCHINI WITH PEPPERONI

DINNER AT HOME

This low carb dinner really hit the spot with great flavor.  I cooked Ground Beef with Onions, Bell Pepper, Carrots, Garlic, Salt Pepper and Oregano.  Added Bertolli's Tomato and Basil Sauce and simmered.  Dug out the inside of the Zucchini and seasoned with Salt, Pepper, Oregano and Flavor God Italian Seasoning.  Grilled the Zucchini on both sides until it was tender with nice grill marks.  Put the Beef and Vegetable mixture into the Zucchini and topped with Mozzarella and Parmesan Cheeses, Pepperoni and a bit more of the Cheese.  Cooked at 375 for about 30 minutes.  Results were delicious!
