TIKI'S GRILL AND BAR

Working a few hours in Waikiki today gave me the rare opportunity to enjoy a very quick lunch overlooking Waikiki Beach.  We went to Tiki's Grill and Bar located on the pool deck of the Aston Waikiki Beach Hotel.  Since it was early, we were quickly seated by a courteous hostess who placed us on the far end of the restaurant overlooking Waikiki.  I did not feel like eating a burger or entree so I went for the Sizzling Lettuce Wraps ($15).  Wow...I was amazed with the presentation and flavors.  First off comes the sizzling platter that is steaming with heat.  Then you get a huge plate of Butter Lettuce cups, bean sprouts, Kim Chee, Noodles and sauce.  Add some beef to the lettuce and top with sprouts Kim Chee, Noodles and the sauce and you have the perfect combination of flavors.  This was good.  Really good.  My co-worker tried the BBQ Pulled Pork Sandwich ($13).  Served with fries or a salad.  He chose the salad.  After seeing the Lettuce Wraps and then tasting one, he wished he had ordered the wraps.

Greg Davis from KHON Channel 2 in Hawaii did a great job writing and directing our new Fujitsu Air Conditioning television commercial.  I won't give you all the details, but the spot features kids in a Spelling Bee competition and somehow relates to air conditioning and Fujitsu.  I think it will come out really good and make people laugh.  Keli lost her usual lead role to Riley this year.  She is still in the spot but Riley got all the face time and lines.  Will post the final commercial as soon as it is edited and finished.  Thanks to the entire crew at KHON 2 who did a fantastic job.  Oh yeah.....and Brigette Abbot too who is our marketing rep for KHON.  Brig did a great job assembling the talent and helping out with production.  When her cell phone was not going off, she actually did a good job.  Our thanks to St. Patrick School too.  St. Patrick's allowed us to use their Assembly Hall for the four hour shoot.

Blessed to enjoy a great evening supporting the University of Hawaii Football Scholarship Fund.  We had a nice opportunity to talk with many current and former Hawaii Football players and coaches.  Bryant Moniz, Hawaii's current Quarterback and Heisman Trophy Candidate for 2011 was super friendly and humble.  Just a joy to talk with him.  Former player Kealoha Pilares who was drafted by the Carolina Panthers was a true gentleman.  Dick Tomey, former Hawaii, Arizona and San Jose State Head Coach was the ultimate gentlemen.  Friendly, sincere and ready to talk about just about any subject.  Dick Tomey and Vince Manuwai from the Jacksonville Jaguars joined our table for dinner and the program.  What a great night and great cause.

We were honored with the presence of baby Reagan (named after Ronald Reagan) for dinner at our house.  Reagan is just two weeks old and one handsome little Republican.  Dinner started with Pineapple and Bacon Sausage and Pork with vegetable dumplings.  Served with a sweet dipping sauce.  We enjoyed some fresh Ahi Sashimi and then started our Grill Pan dinner that featured fresh vegetables, seafood and steak.  All cooked up on an indoor grill pan placed in the middle of our dining room table.  This type of dinner is not only delicious but good fun for everyone.  You cook right at the table.  We heat up the pan and then add butter.  When the butter melts, add the vegetables, seafood and beef.  Simply salt and pepper to taste and then dip into Batayaki Sauce (Soy Sauce, Ginger Juice, Lime Juice, Brown Sugar, Water, Daikon and Dashinomoto Seasoning).  Our Grill Dinner included Napa Cabbage, Assorted Bell Peppers, Asparagus, Bean Sprouts Maui Onion, Eggplant, Zucchini, Thinly Sliced Rib Eye Steak, Shrimp, Scallops, Langostines, Portobello Mushrooms and Teriyaki Chicken.  Wow....This dinner is amazing, fun and super delicious.
Traditional Shabu Shabu uses a rich broth to cook the meats, seafood and vegetables.  Our home version is a bit different but we like it.

Enjoyed one of my favorite dishes tonight thanks to my lovely bride.  Chilean Sea Bass stuffed with a Quail Egg.  The Sea Bass was poached to perfection.  When you take a bite of the fish, the Quail Eqq explodes and the yolk oozes out onto the fish.  Simply delicious.  Loved the roasted potatoes and asparagus too.  The chocolate lava cake was the bomb.  I am one lucky Daddy.

Costco had huge chunks of Beef Brisket on sale so I decided to try my luck at making BBQ Beef Brisket at home.  I did some research on the internet and watched America's Test Kitchen recipe on youtube.  Made up a rub using a variety of different recipes.  Basically added things I like.  Paprika, Cumin, Chili Powder, Garlic Powder, Onion Powder, Brown Sugar, Cayenne Pepper, Red Chili Flakes, Oregano, Salt, Pepper and White Sugar.  Rubbed this all over the brisket and then wrapped it in plastic wrap and refrigerated overnight.  The next morning, I added hickory wood chips to my smoker box and got them smoking good.  Placed the brisket on the gas grill and cooked for two hours at around 200-250 degrees.  After two hours, I wrapped the brisket in foil and placed it in the oven at 300 degrees for three hours.  Removed the brisket and then let it rest for 30 minutes.  The brisket was very juicy, moist and delicious.  Not bad for first time.
