BOURBON CHICKEN THIGHS - PRESSURE COOKER RECIPE

BOURBON CHICKEN THIGHS
DINNER AT HOME

Getting pretty comfortable using the Pressure Cooker thanks to Bob Warden's Great Food Fast Cookbook.  The recipes are easy to follow and yield some really good food.  This recipe was not a big hit with the family but I liked the flavor of the chicken.  It came out super moist.  The Bourbon Glaze did not come out as expected and this is probably because I did not have Chili Sauce and substituted Sambal Oelek Chili Paste.  My sauce did not thicken as shown in the photo below.
Served the Bourbon Chicken on a bed of Risotto that was also cooked in the pressure cooker.

BOURBON CHICKEN THIGHS AS SHOWN IN THE BOB WARDEN'S COOKBOOK
BOURBON CHICKEN THIGHS RECIPE
HEAT OIL IN PRESSURE COOKER UNTIL SIZZLING
ADD CHCKEN THIGHS AND BROWN ON BOTH SIDES
BROWNED CHICKEN THIGHS
ADD CHILI SAUCE, APPLE JUICE, SOY SAUCE, BOURBON, ONION POWDE, GARLIC
POWDER AND CRUSHED RED PEPPER
PRESSURE COOK ON HIGH FOR 8 MINUTES
COOKED CHICKEN
ADD CORN STARCH AND WATER MIXTURE TO THICKEN SAUCE
BOURBON CHICKEN THIGHS WITH RISOTTO
