Shirley made some incredible fresh and fried Lumpia.  Cannot pick one over the other as both are great.  What I do like about the Fried ones though is she makes a spicy vinegar sauce that I just love.  Adds flavor and heat which makes these Lumpia's hard to beat!

FRESH MARLIN SLIDERS

Enjoying some more delicious fresh Marlin.  This time I made little Sliders with grilled Marlin, Homemade Tarter Sauce, Lettuce, Onion, Tomato and Avocado.  These little babies are so damn good that if you tried one you would want to kiss the chef (me)!

Decided to start todays self-isolation with a Breakfast Burrito.  Refried Beans, Eggs, Tomatoes, Lettuce, Avocado, Cheese and Hot Sauce.

Fresh fish is abundant and inexpensive now so I bought some Marlin that was only $3.  Grilled it and served with an incredible Pineapple Salsa with Balsamic Glaze.  Also made a little sauce using Shallots, Garlic, Olive Oil, White Wine, Butter and Cream.  My Wife cooked Parmesan Crusted Zucchini in the Air Fryer as a side.  This dinner was more than delicious.  It was amazing!

Discovered my new favorite snack during self-isolation from the COVID-19 pandemic.
Take a Mini Kosher Dill Pickle and wrap it in a piece of Swiss Cheese.  Oh my...what a delicious combination.  Tri it!

Fresh fish prices in Hawaii are at an all time low because hotels and restaurants are closed.  I am taking this opportunity to enjoy as much as I can.  Bought this beautiful piece of fresh Ahi Tuna and made a Seared Ahi Salad.  This is so simple.  Coat the Ahi in Cajun Spices and sear for about 20-30 seconds on all sides in heated olive oil.  Thinly slice the Ahi and dip in a mixture of Soy Sauce, Wasabi, Sesame Oil and Honey.  One of my all-time favorite dishes in Hawaii!

I am on a mission to do what I can do to support local restaurants and small businesses during these Covid-19 times.  Besides donating to @showalohachallenge, each week I am buying lunch for my entire office of 30 people. This week it was Maile's Thai Bistro.  I have known Maile for over 20 years and she is an incredible person and chef.  She works so hard at her Hawaii Kai and Ward restaurants and is always there to support my golf tournament that raises money for cancer research.
Ordering 30 lunches from Maile made me so happy.  Maile made up a special plate that consisted of Pad Thai Noodles, Fried Chicken, Green Curry with Chicken, Jasmine Rice and a salad.

I follow Olena on Instagram and love the videos they post showing Chef Ron preparing his food.
On this morning he was making an Italian Meatball Sandwich and it looked so good.  After seeing the short video I texted the restaurant to ask how much the sandwich was.  They texted me right back and said $15.  Wow...a bit expensive I thought but it looks so good.  I asked if I can order five sandwiches for pickup at 11AM.  A text came back asking me to order on their website so it would be in their system.  This was great because I could order and pay online and just have the sandwiches picked up.    One of my Associates at work drove up to Olena at 11AM and they were greeted and given the food in just seconds.  As a thank you for a nice tip my bag included some free Poke and a Chicken Porridge.  This was so nice I thought.  The Meatball Sandwiches included the Meatballs, Muenster Cheese, Peppers and Onions on a buttered and toasted bun.  Delicous!  Oh why did I order five sandwiches?  Bought four extra for my front counter personnel who work hard serving our customers.  Olena is a great small business that needs to be supported during these difficult times.

CHICKEN AND RICE SOUP

 CHICKEN AND RICE SOUP

Had less than half of a Rotisserie Chicken left and decided to make Chicken Soup.  Started by sautéing onion, shallots, garlic, carrots and celery in a little olive oil.  Placed the entire chicken carcus with meat and skin in the pot with vegetables and covered with chicken stock.  Brought it to a boil and then turned the heat down and simmered for about half an hour.  Removed the chicken and cooled.  Pulled all the chicken off the bones and shredded.  Also removed skin and threw it away.  Put all the chicken back in the pot and turned heat up to a boil.  Added four tablespoons of Better than Bouillon Chicken Base and  half a cup of Wild Rice, salt, pepper and thyme.   Turned down heat and simmered until rice cooked.  Probably one of the best Chicken Soups I have had in years.

Woke up thinking of making Breakfast Burritos but found out that we only had corn tortillas.  Decided to make Breakfast Tacos instead.  Used the leftover shredded chicken that I marinated in Mexican tomatoes.  Mixed it with two scrambled eggs and heated.  Warmed the Corn Tortillas on a flattop grill and then layered them with Refried Beans, Chicken, Lettuce, Cheese, Pico de Gallo and Cilantro.  Oh and a bunch of hot sauce.

This simple and delicious fresh fish dinner was under $10 total for our family of three.  The super fresh Monchong has a mild flavor and needs a sauce.  I used some Lomi Salmon that we had in the refrigerator.  Usually make a white wine and butter sauce but my Wife and Daughter love Lomi Salmon and I wanted to use up what we had in the fridge.  Delicious!

There is a glut of fish on the market in Hawaii.  With restaurants and hotels closed due to COVID-19, fish prices have dropped dramatically and the markets are filled with a great selection.  I bought some super fresh Monchong and made one of the best Fish Sandwiches I have ever tasted.  Grilled the fish and served it on a toasted bun with lettuce, tomatoes, onion and a homemade tarter sauce.

My Wife makes the best Sweet and Sour Pork.  The Pork is plump, moist and flavorful unlike the dry heavily breaded stuff you get in most Chinese restaurants.  She uses fresh Hawaii pineapple and makes a slightly sweet sauce that is not heavy.  Its like a more healthy version of Sweet and Sour Pork and I absolutely love it.

Kahai Street Kitchen is one of my favorite and go to restaurants in Hawaii.  I have eaten here for years and they have catered many events for my company and personal parties.  Love their food, ownership team and employees.  Really special people that work hard and always give their best.  With many restaurants struggling due to Covid-19, I decided to buy lunch once a week for my entire company from a local restaurant so I can give back.  Of course Kahai Street was at the top of my list of restaurants so on this day I picked up 30 plates of Beef Stroganoff which was the Daily Special.

Another delicious visit to Ono Korean BBQ.  Spicy Chicken/Spicy Pork Combination with Korean Glass Noodles, Daikon, Cucumbers and Kim Che.  As usual, I could only eat less than half of this $13 lunch so the rest went home for dinner.  Ono does Korean BBQ right and I love their vegetables.

Damn...this was good.  Used Rotisserie Chicken that I shredded and mixed with sautéed onions, jalapeños and a can of Mexican Style Tomatoes.  Let it simmer for an hour and crush up the tomatoes really good.  In another saucepan I sautéed lots of onions and jalapeños and then added a can of Spicy Refried Beans.  Mixed and simmered until the beans were warm and creamy.  Layered the beans first, then the chicken, hot sauce, lettuce, cheese Pico de Gallo and topped with Avocado.  Probably one of my favorite Tostadas ever.  Use the pre-cooked Tostadas so you don't have to use oil and fry.

RACK OF LAMB

RACK OF LAMB

Enjoyed a delicious herb crusted Rack of Lamb at home.  My Wife put this dinner together in less than an hour and believe me it was incredible.  Brushed the Rack with Olive Oil and then seared all sides in a skillet.  Crusted the Lamb with dijon mustard, bread crumbs, minced garlic, rosemary from our back yard and salt/pepper.  Placed in oven and cooked for around 15 minutes in a 400 degree oven.  The Brussels Sprouts were cooked in an Air Fryer and garnished with Parmesan Cheese and Pancetta.

THE DREW BURGER

THE DREW BURGER

Next to an In N' Out Burger, I will take my Drew Burger over any other burger.  I modeled my burger after In N' Out and even layer the ingredients like they do.  My sauce is similar (ketchup, mayo and sweet pickle relish) and I lightly butter and toast the bun.  The key to the Drew Burger is the beef.  I only use the Sams Club 1/3 pound Angus Beef Patties.  Cook on grille and make sure you salt and pepper both sides liberally.  Make this burger exactly as shown and you will love it!
