GRILLED MARLIN
DINNER AT HOME 

Love it when I visit the market and find fresh fish that looks delicous even in the cooler.  This week I found a nice chunk of Marlin that was perfectly pink and thick.  One piece was enough to feed the entire family.  I grilled the Marlin on an indoor grill pan and then finished it in a 350 degree oven for around 10 minutes.  The fish was cooked to perfection leaving just a hint of pink in the middle.  The one thing you do  not want to do with Marlin is overcook it.  It is a firm and meaty fish and can become dry if you cook it too long.  Marlin has a mild flavor and it is always good to serve it with a sauce.  I sautéed shallots and garlic in a little bit of olive oil and butter.  Deglazed with white wine and then added some chicken stock.  Reduced and finished with a little more butter, lemon juice, capers and pepper.  No need to add salt as the capers take care of that.  Served up with some Garlic Mashed Potatoes because I ruined the rice that I was going to serve with this dish.

THIS LARGE PIECE OF MARLIN WAS AROUND $10 AND WAS ENOUGH FOR DINNER FOR 3
ALMOST 1" THICK PIECE OF LOCAL FRESH MARLIN
GRILLED FOR A FEW MINUTES ON EACH SIDE
BOTH SIDES GRILLED AND THEN POP IN 350 DEGREE OVEN FOR AROUND 10 MINUTES
FINISHED MARLIN LOOKED AND TASTED DELICIOUS
MADE SIMPLE SAUCE OF WHITE WINE, BUTTER, CHICKEN STOCK, SHALLOTS AND GARLIC.
ADDED LEMON JUICE, MORE BUTTER CAPERS AT THE END
GREAT TASTING FRESH MARLIN DINNER WITH GARLIC MASHED POTATOES AND BEETS


SAW THESE INCREDIBLE FRESH FILETS AND HAD TO COOK THIS AGAIN

COLOR AND TEXTURE WERE AMAZING

GARLIC, SHALLOTS, LEMON JUICE, WHITE WINE, WHIPPING CREAM, CAPERS 
AND CHICKEN STOCK (NOT SHOWN)

SAUTE SHALLOTS AND GARLIC IN A LITTLE BUTTER AND OLIVE OIL

COOK UNTIL TENDER

DEGLAZE WITH WHITE WINE AND REDUCE

ADDED CHICKEN STOCK AND REDUCED

COOKED FRESH MARLIN ON INDOOR GRILL PAN

SEAR BOTH SIDES OF THE MARLIN AND THEN PLACE IN 350 DEGREE OVEN FOR 8-10 MINUTES

ADDED CREAM, BUTTER AND CAPERS TO SAUCE

SAUCE IS READY

TOOK FISH OUT OF THE OVEN AND LET FINISH ON THE GRILL PAN.
YOU CAN SEE THE NICE PINK COLOR

THIS IS A FANTASTIC RECIPE THAT IS QUICK AND EASY!
