CHEF SALAD WITH SHRIMP AND SCALLOPS
DINNER AT HOME

 I wanted to make a salad for dinner because we had two kinds of lettuce and I wanted to use it up before it spoiled.  While at the Market I saw a small package of Scallops on sale for $2.34.  I picked some up along with Shrimp that was put on a Managers Special and created a pretty great tasting salad in a matter of minutes.  Marinated the Shrimp in chopped garlic and a balsamic dressing for one hour before grilling them.  Cooked the scallops in butter for only a couple of minutes.  They were small and cooked quickly.  Made sure not to overcook the Scallops so they stayed moist.  Added fresh Avocado, Boiled Egg and thin slices of Provolone and Cheddar Cheeses.  Used Turkey Bacon to reduce fat and it tasted great.  This was an inexpensive low fat meal that really satisfied.  Eating more meals like this and doing a little more walking has helped me to lose 13 pounds the past two months.  Hope to drop another 10 pounds by August!
