MARLIN WITH LINGUINE
DINNER AT HOME

Pretty simple dish cooked up with some really fresh marlin from Sam's Club.  This is very light and delicious meal perfect for a summer evening.  Entire family loved the fish and pasta.

SAUTE GARLIC AND SHALLOTS.  DEGLAZE WITH WHITE WINE.
ADD BUTTER, CAPERS AND LEMON JUICE
MARLIN WITH SALT, PEPPER AND GARLIC POWDER 
PLACE FISH IN FLOUR, EGG WASH AND BREAD CRUMBS
SAUTE FISH IN SAUCE UNTIL JUST COOKED THROUGH.
DON'T OVERCOOK.   WILL RUIN THE FISH
MARLIN COOKS IN JUST A FEW MINUTES.
ADDED FRESH THYME AT THE END.
SERVED WITH LINGUINE THAT IS COVERED IN PAN SAUCE
