MONCHONG
DINNER AT HOME
Dined at two local fine dining restaurants recently and both featured Monchong as the Daily Fresh Fish Special. Found out why when I visited the market today. Monchong was the lowest price fish in the market. Far less than Mahi Mahi, Ono, Ahi and Shark. Monchong is available year round and can only be found in Hawaii waters. The snow white meat is firm yet preserves moisture. It is a perfect fish for grilling, saute, baking or poaching. The fish has a unique buttery flavor but really needs a sauce to deliver the BAM! I prepared a Soy, Honey, Garlic and Ginger sauce that really kicked up the flavor and made this dish restaurant quality. Even better than the Monchong that I paid around $30 for in a local restaurant. Served the fish on a bed of Cannelloni Beans, Corn, Bok Choy and Leeks that I sauteed in garlic, ginger and a touch of butter.
