GRILLED MARLIN
DINNER AT HOME
So lucky to be able to enjoy really incredible fresh fish from waters around Hawaii.
Marlin is a beefy fish with delicate flavor. It is great for the grill as long as you do not overcook it.
The fish can dry out quickly and become quite tough so I watch it closely and leave just a hint of pink in the middle. Adding a sauce can really add flavor to Marlin. For this dinner, I sauteed some shallots and garlic and then de-glazed with a touch of white wine. After the wine reduced I added some chicken stock and reduced again. To finish the sauce I added some butter and fresh thyme that a friend gave me from her garden. The Marlin and sauce were delicious, light and fresh.
