DINNER AT HOME
Keeping it Keto with a nice Ribeye Steak and some Roasted Bok Choy with Soy Sauce and Sesame Seeds. Since we cannot enjoy Rice or Potatoes during Keto, we are trying all kinds of substitutes. On this night I tried Konjac Rice which is a Japanese Plant Based Product. I rinsed the Konjac as directed and then sautéed it with some Italian Sausage, Cheddar and Parmesan Cheese. The Konjac was not bad and I think with some imagination we can come up with some other ways to flavor it. Really missing Rice and Pasta but I got to keep on the Keto diet. We are having difficulty consuming enough fat on Keto. Just don't have the appetite to power through a bunch of Eggs, Bacon, Cheese and other high fat foods. Trying our best though and loving all the Avocados!
