DINNER AT HOME
Day 3 of our diet so I scrubbed the Pasta and made Stuffed Zucchini boats. These are so delicious. I wanted to eat two but held back and was satisfied with one. We let our Daughter have the one with Parmesan Cheese. For the stuffing I sautéed Garlic, Onion, Celery, Mushrooms, Bell Pepper with some Flavor God Italian Seasoning and Oregano. Cooked some lean Ground Beef and mixed it with the vegetables and then added a nice Tomato Sauce. Let it all simmer for about on hour and then served with a little Parsley and Basil. I grilled the Zucchini until it had nice grill marks on both sides and was soft. Delicious and very satisfying.
