MAHI MAHI WITH VEGETABLES

MAHI MAHI WITH VEGETABLES
DINNER COOKED AT HOME

Wanted to cook up some fresh fish after having lots of meat in New York.
Took vegetables we had in the refrigerator and added some lemon grass, white wine
and butter to make a delicious and light dinner.

CHOP UP ALL THE VEGETABLES YOU HAVE IN THE FRIDGE.
ONIONS, GARLIC, BELL PEPPER, CARROTS, CELERY, ZUCCHINI
AND LEMON GRASS
FRESH MAHI MAHI AT $18.99 PER POUND
PLACE VEGETABLES ON BOTTOM OF ALUMINUM FOIL
PLACE MAHI MAHI ON TOP OF VEGETABLES
SALT AND PEPPER THE FISH AND VEGETABLES.  PLACE A
FEW PIECES OF BUTTER ON FISH AND POUR WHITE WINE
OVER FISH.
WRAP UP FISH AND VEGETABLES IN ALUMINUM FOIL
PLACE PACKETS ON GRILL AND COOK FOR AROUND 15 MINUTES
CLOSE GRILLE WHILE FISH AND VEGETABLES STEAM TO PERFECTION
FISH AND VEGETABLES ARE COOKED TO PERFECTION
TOP FISH WITH A BIT OF CILANTRO
