Picked up a Rotisserie Chicken and made these delicious Chicken Enchiladas.
Ala Madre low carb tortillas of course!
CHICKEN ENCHILADAS |
SHREDDED CHICKEN, GREEN CHILIS, ONION, BELL PEPPER, GARLIC, MEXICAN TOMATOES, CREAM CHEESE, TACO SEASONING, SALT AND PEPPER |
ENCHILADA SAUCE, CORN TORTILLAS AND FILLING |
MEXICAN CHEESE BLEND |
BAKED AT 350 DEGREES FOR 40 MINUTES |
