LINGUINE WITH CLAM SAUCE
DINNER AT HOME
Here a a very simple and delicious recipe for Linguine with Clam Sauce that you can have on the table in around 30 minutes. I have used Chopped Clams and Fresh Clams or a combination of both. This version uses Chopped Clams that I had in the refrigerator. Simply dice up a bunch of garlic and shallots and then sauté them in a little Olive Oil and Butter. I add a few pinches of Crushed Red Pepper to add a little heat. When the Shallots and Garlic are cooked deglaze the pan with White Wine. Let the wine reduce and then add in the Chopped Clams with all the Clam Juice. Let this heat through and simmer. Add in a small can of Tomato Sauce (yes Tomato Sauce) and simmer on low heat. To finish I added about three tablespoons of butter. I love this dish and the sauce gets better after being refrigerated for a day.

WHITE WINE, CHOPPED CLAMS W/JUICE, PARSLEY, TOMATO SAUCE, GARLIC AND SHALLOTS |

SAUTE THE GARLIC AND SHALLOTS IN A LITTLE BUTTER AND OLIVE OIL |
|
ADD CRUSHED RED PEPPER IF YOU LIKE SOME HEAT |
|
COOK UNTIL THE SHALLOTS ARE TRANSLUCENT |
|
DEGLAZE WITH WHITE WINE AND LET REDUCE |
|
ADD IN THE CHOPPED CLAMS WITH ALL THE CLAM JUICE AND HEAT THROUGH - SIMMER |
|
ADD THE SMALL CAN OF TOMATO SAUCE AND HEAT THOROUGHLY - SIMMER ON LOW HEAT |
