TURKEY SOUP
DINNER AT HOME
Had to make use of a lot of Thanksgiving leftovers so I decided to make Turkey Soup. Started by using the carcass from our Turkey and then added lots of fresh vegetables and herbs. This is a delicious and hearty Turkey Soup.
PLACED THE CARCASS, BONES AND NECK IN ABOUT 2 QUARTS OF CHICKEN STOCK AND WATER. SIMMERED FOR SEVERAL HOURS UNTIL THE MEAT WAS FALLING OFF THE BONE |
SAUTEED GARLIC, ONIONS, SHALLOTS, CELERY AND CARROTS AND THEN ADDED FRESH SAGE, THYME, PARSLEY, SALT AND PEPPER. SET ASIDE. |
PULLED ALL THE MEAT OFF THE BONES |
REMOVE SKIN AND GET ALL THAT DELICIOUS TURKEY MEAT |
ADDED TURKEY MEAT AND A CUP OF RICE TO THE LIQUID. SIMMERED UNTIL THE RICE WAS COOKED. ADDED GARLIC POWDER AND ONION POWDER AND A LITTLE CHICKEN BOUILLON. |
ONCE THE RICE WAS COOKED I ADDED ALL THE VEGETABLES |
STIR AND SIMMER FOR AROUND 30 MINUTES |
TURKEY SOUP IS READY TO SERVE |
