STEAK, MAHI MAHI AND PASTA
LABOR DAY DINNER AT HOME
Enjoyed an absolutely delicious meal with family on Labor Day. Kept the preparation and dishes very simple so I was not spending too much time in the kitchen. Started the meal with Pappardelle Pasta topped with Fresh Local Oyster Mushrooms, Shin-take Mushrooms in a Sage and Butter Sauce.
This dish is so easy and huge on flavor. Simply heat butter until slightly brown. Add lots of fresh Sage and remove from heat. Let the Sage penetrate the butter and then return to heat and add mushrooms. Cook until tender. Pour sauce and mushrooms over the pasta and garnish with a little Parmesan Cheese and sage. Another very simple and delicious plus healthy dish is Mahi Mahi with vegetables cooked in foil on the BBQ. Place fresh vegetables on bottom of aluminum foil. Place fish filets on vegetables. Salt and pepper the fish and top with a pat of butter. Splash white wine over the fish and then add another layer of vegetables on top. Season to taste and wrap in foil. Cook on BBQ for around 15 minutes. Open the foil packet and you have a great fish dish with very little hassle. Our Rib Eye Steaks were cooked with just salt, pepper, garlic powder and a little brown sugar on top. Don't use too much brown sugar. Just enough to caramelize and add a dimension of flavor that your guests will love. Learned this from DK's Steakhouse in Waikiki where they serve a Bone In Rib Eye with a similar rub.
