I cannot believe the price of fresh fish at Whole Foods Market in Hawaii. Prices on this day ranged from $12.99 to $30 per pound. With Mahi Mahi at $18 per pound I looked for an alternative and found Dover Sole for just under $10 per pound. I don't have much experience with Dover Sole so I used a pretty basic recipe to make Dover Sole Piccatta. The dish came out pretty good but my Daughter said it was too "lemony". I agreed. Should have tasted the sauce before squeezing the second half of the lemon in the sauce. Dover Sole is a very light fish with mild flavor. The sauce kicked up the flavor and was very easy to make.
PICKED UP A POUND OF DOVER SOLE FOR UNDER $10 |
BUTTER, SHALLOTS, LEMON, SHALLOTS, CAPERS AND GARLIC |
FLOUR SEASONED WITH SALT AND FRESHLY CRACKED PEPPER |
LIGHTLY DUSTED THE DOVER SOLE IN FLOUR |
YOU CAN FRY THE FISH IN OLIVE OIL OR BUTTER. I WENT FOR THE BUTTER. |
COOKED FOR ABOUT TWO MINUTES ON BOTH SIDES AND THEN PLACED THE FISH ON A HEATED PLATE IN 200 DEGREE OVEN WHILE I FINISHED THE SAUCE |
DEGLAZED THE PAN WITH A 1/2 CUP OF WHITE WINE AND REDUCED |
ADDED SHALLOTS AND GARLIC |
ADDED BUTTER AND LET THE SAUCE THICKEN |
SAUCE THICKENED NICELY ON LOW HEAT |
ADDED CAPERS AND FRESH PARSLEY |
