EASTER PRIME RIB DINNER

EASTER PRIME RIB
DINNER AT HOME

What a blessing to enjoy this incredible dinner at home with my girls.  While we usually have a small party with friends and family for Easter, this year we limited it to the three of us because of the COVID-19 epidemic.  My Wife cooked up everything except for the Deviled Eggs which is my specialty.  Cooked two Prime Ribs and delivered one of them to my Wife's family who lives in Honolulu.  We started the meal with Croque Monsieur in Puff Pastry with Black Forest Ham and Gruyere Cheese.  These are so good that it is difficult not to want to fill up on them.  They are so light but filled with a ton of flavor.  Next up were my Deviled Eggs which I make with shallots, mustard, relish, hot sauce and a few other secrets.  Topped them with a little Paprika and a piece of Bacon.
I could eat all of these myself.  The Au Gratin Potaotes with Onions and Prosciutto and I don't know how many kinds of cheese is so good its like eating candy.  The crunchy cheese top make these the best potatoes ever.  The Horseradish and Herb Crusted Prime Rib was better than most restaurants and made this dinner one to remember.  After eating all three of us said this was one of our favorite meals and we gave thanks for this time with family and great food.
