GRILLED STRIPED MARLIN WITH BABY BOK CHOY
DINNER AT HOME
Trying my best to keep it healthy as we enter the Holiday Season where I know things will get out of control with fat and calories. We are so lucky to live in Hawaii where fresh fish is usually in abundance. On this day, our market had fresh Mahi Mahi, Ahi Tuna, Opah, Shark and some really nice looking Striped Marlin for under $8 per pound. I went with the Marlin. This is a meaty fish that is like a steak. It is not fishy and cooks really well on the BBQ. Just added some salt, pepper, onion powder and olive oil to the fish and then cooked it on the grille for around five minutes on each side.
Served with fresh Baby Bok Choy that we sautéed in garlic, ginger, salt, pepper and a hint of sugar.
Added some sliced carrots to the plate for color but they actually went well with the Bok Choy.
