BAKED MAHI MAHI IN PARCHMENT PAPER
DINNER AT HOME
Trying to reduce the amount of fat in our diets so we went with a Baked Mahi Mahi recipe using Parchment Paper. The parchment paper allows the fish to steam and it comes out moist and delicious. You can use any vegetables you have in the refrigerator and then just add some seasoning and liquid. We used Chicken Broth and White Wine. I was out of garlic and ginger but would have used them if available. This is a simple and easy recipe that allows you to be creative and use ingredients you have available. I have added butter, soy sauce, lemon juice, oyster sauce and even teriyaki sauce at different times. Bell Peppers, Celery, Zucchini, Shallots, Cilantro and Fennel can be used if you have them. You can do this on the outdoor grill too. Fish will always be moist.

SEASON MAHI MAHI WITH SALT AND PEPPER, PLACE A PAT OF BUTTER ON FISH AND THEN COVER WITH ALL YOUR VEGETABLES |

A LITTLE CHICKEN BROTH AND WHITE WINE. SOY SAUCE ALSO GOOD. |

POUR IN SOME CHICKEN BROTH |

ADD SOME WHITE WINE |
|
CLOSE UP YOUR FISH PACKETS AND PLACE IN PREHEATED 375 DEGREE OVEN FOR ABOUT 20 MINUTES |

REMOVE FROM OVEN AND OPEN THE PACKETS |
|
FISH AND VEGETABLES ARE COOKED AND READY TO SERVE |
