OPAKAPAKA WITH PAPAYA SALSA
DINNER AT HOME
Picked up a whole fresh Opakapaka for around $20 and turned it into a great dinner for the family. After a quick filet, we cooked the head and body in a little oil until crispy. Set this aside and picked off the meat as a little appetizer. It was really good but you had to watch out for the bones. The Opakapaka filets were cooked in a little bit of Olive Oil until the outer skin was crispy. The flipped a put a quick sear on the other side. Added Salt, Pepper and some fresh Lemon juice and that was it. Served with a fresh Papaya Salsa with Tomato, Onion, Cilantro and Papaya. Messed up the presentation a bit but this was a good fresh healthy meal that the entire family loved.
