Saigon Vietnamese Cuisine is my "go to" place in Chinatown when I am craving a hot bowl of Pho.  Pho is a Vietnamese Soup that can be served with meat, vegetables or chicken.  When it comes to Pho, I am an all beef kind of guy.  Saigon Vietnamese Cuisine loads their Beef Pho with large pieces of Rare Steak and Brisket.  The Steak is cut thin and served raw.  The broth from the Pho actually cooks the meat.   I always order the Regular portion and can never finish the entire bowl.  They also serve a Large size portion that is even larger than the photo below.  When my Pho arrives I add lots of Bean Sprouts, Jalapeño and Basil plus a ton of hot sauce.  I make it hot so it clears my sinuses.  Thats just the way I like it.  Always order the Spring Rolls here as an appetizer before my Pho.  The Spring Rolls are crispy and served with lettuce, cucumber, daikon, carrots, noodles and lots of fresh mint.  You simply take a little of everything you like on the plate and place it inside a lettuce leaf.  Roll it up like a burrito and you have a fantastic snack that really satisfies.  I always top my Spring Roll with a nice dose of hot sauce.  This is one of my favorite lunchtime meals in Hawaii.
