SQUID INK LINGUINE WITH SCALLOPS, SHRIMP, TOMATOES AND GARLIC
DINNER AT HOME
Watching a cooking show and saw a Squid Ink Pasta dish being made in Italy. Looked so good that I bought some Squid Ink Linguine (on Amazon) and started Googling recipes. Since most recipes used Shrimp, I made my own variation based on the recipe below. I sautéed a lot of chopped Shallots and Garlic in Olive oil and Butter. Added Tomato Paste and chopped Sun Dried Tomatoes. Sautéed for a minute or two and then added the Cherry Tomatoes. Let them cook a bit and then added 1/2 cup of White Wine and 1/2 cup of Chicken Stock. Let this reduce and added Salt and Pepper. Added Butter, Lemon Juice (go easy on the Lemon Juice. Add a little then taste and adjust) and Zest stirred and simmered. Added chopped Basil and Italian Parsley (from our garden!). Separately I seasoned the Scallops and Shrimp with Salt, Pepper and a little bit of Lemon/Pepper. Pan seared the Scallops in butter for just two minutes on each side removed and cooked the shrimp. Removed and set aside.
Cooked the pasta and added a few ladles of the pasta water to the sauce. Simmered. Added the cooked al dente pasta to the sauce and stirred it all up. Plated with the pasta and sauce then topped with Scallops, Shrimp, fresh Basil and Parsley. This was delicious and really loved by my Wife.
