DINNER AT HOME
This recipe is now a family favorite. I don't use measurements and just wing it with the ingredients. Have made this twice and it is far better than most restaurants. Totally restaurant worthy in the comfort of home. Love it!

INGREDIENTS FOR SPICY RIGATONI ALLA VODKA |

OLIVE OIL |
|
SAUTE ONE ONION AND GARLIC. ADD CRUSHED RED PEPPER IF DESIRED |

ADD CALABRIAN CHILIS (I ALSO ADD CALABRIAN TAPENADE)) |
|
TOMATO PASTE AND A BIT OF SALT AND PEPPER TO TASTE |

ADD 1-2 SHOTS OF VODKA AND LIGHT ON FIRE TO BURN OFF THE ALCOHOL

STAY CLEAR OF FLAME AND MAKE SURE YOU HAVE ENOUGH CEILING HEIGHT AS FLAME WILL BE HIGH. DON'T DO THIS IF YOU DON'T HAVE A CLEAR AND CLEAN AREA, RANGE HOOD AND SAFETY PLAN |

ADD HEAVY CREAM AND PECORINO CHEESE. STIR. ALSO ADDED SOME BUTTER. SOME RECIPES CALL FOR A LITTLE SUGAR TOO. ADD PASTA WATER TO GET THE CONSISTENCY YOU LIKE. WE LIKE THE SAUCE A BIT THICK AND NOT WATERY. |

MIX WITH COOKED PASTA. STIR WELL UNTIL PASTA IS COATED
