This was my third visit to Giada in Las Vegas. The first visit when they first opened was not too good. Second visit I loved everything we ate. On this visit I loved everything again but was shocked that they served the Cacio e Pepe with a cream sauce. I took at cooking class in Tuscany with an award winning Italian Chef and she said "never" put cream in Cacio e Pepe or Carbonara. We actually made both of these dishes in the class at her restaurant. Started with the Shrimp Cocktail which were large, meaty and delicious. Some of the best ever. The Romaine Salad was perfect. Crisp greens and tasty dressing. Heck, even the croutons were delicious. The Bucatini Pasta was perfect. Loved the flavor and pasta which was perfectly
al dente. Calabrian Chili and fresh Ricotta made this delicious. I finished it all and then went to work on the $80 Bucatini Cacio e Pepe served in a wheel of Pecorino Cheese. Wow...the melted Pecorino was amazing and perfect with the pasta. Delicious except for the fact that they poured a load of cream sauce over it. I had this dish here last year and they did not add the cream. Anyway, this was a delicious meal and I will return again.
