DINNER AT HOME
This dish was far better than I expected. Actually was delicious and something I will make again soon. I used the same meat and vegetable mixture that I use for Spaghetti Sauce. Onions, Garlic, Carrots, Celery, Bell Pepper, Red Chili Flakes, Sausage and Ground Beef. Brought everything together is a large sauce pan and added one jar of Bertoli Marinara Sauce. Hollowed out the Zucchini using a spoon then sprinkled with Salt, Pepper, Flavor God Italian Zest Seasoning and Olive Oil. Grilled on the BBQ until it was soft and then placed them in a shallow baking dish. Filled the Zucchini with the Sausage, Beef and. Vegetable mixture and then topped with Mozzarella and Parmesan Cheese. Placed back onto the BBQ and heated until the cheese melted. The Zucchini was a nice change up from Pasta.

I stuff those cute little zucchini boats with lots of things, taco fixings, artichoke hearts with chicken and alfredo sauce, scrambled eggs and sausage, I could go on... The are a great non-carb alternative. I also use zucchini spirals, mix with a peanut sauce, and put chicken, shrimp, or whatever protein I have in them along with some green onions and additional peanuts for crunch.
