DINNER AT HOME
Wow...was I amazed how good this Eggplant Parmesan turned out. Made me a lover of Eggplant.Pretty simple recipe I got while watching Lidia's Kitchen on PBS. Layers of sliced Eggplant, Parmesan Cheese and Tomato Sauce. I added a bit of Mozzarella because we had some that needed to be used. Topped with a little fresh Italian Parsley and Basil.
