DINNER AT HOME
My Wife loves the Swordfish with Avocado Butter served at the Brigantine in Del Mar, CA.
I wanted to replicate the dish for her but could not find fresh Swordfish at the market. They did have fresh Mahi Mahi at the crazy price of $29 per pound though. I bought the Mahi despite the high price as it was the best fish available at this time. Marinated the fish in a mixture of Oil, Soy Sauce, Garlic and Lemon Juice. Made the Avocado Butter by mixing together Butter, Avocado, Lime Juice, Garlic, Salt and Parsley. This dish came out amazing and the fresh Mahi was delicious. The Avocado Butter was a hit with the Wife too!
